Jasmine Fruit Salad

Jasmine Fruit Salad

  • 1/2 cup dark raisins
  • 1/2 cup golden raisins
  • 1 cup dried apricots
  • 2 cups chopped, mixed dried fruits
  • 1 cup slivered almonds
  • 1/2 cup pine nuts
  • 1/4 cup maple syrup
  • 1 vanilla bean, split lengthwise down the middle (but not cut through)
  • 2 cups hot steeped Jasmine Green tea
  • 1 teaspoon almond flavoring
Directions: Place raisins, apricots and dried fruits in a large mixing bowl.  Add the nuts, syrup, and vanilla bean.  Pour the hot Jasmine Green tea over the mixture and stir. Allow to rest until it reaches room temperature.  Add the almond flavoring and stir well.

Cover the bowl and refrigerate overnight.  Bring to room temperature before serving.  Remove the vanilla bean, stir gently. Serves 8.
